Gustation is the sense of taste — the chemical sense that detects dissolved molecules through taste receptor cells on the tongue. It distinguishes five basic qualities: sweet, salty, sour, bitter, and umami.
Gustation is one of the two chemical senses, alongside olfaction (smell). Taste begins when molecules dissolve in saliva and contact taste receptor cells clustered in taste buds. Taste buds sit within papillae on the tongue and also appear on the soft palate, epiglottis, and upper esophagus. Each taste bud contains 50 to 100 receptor cells that respond to multiple taste qualities, so the familiar "tongue map" assigning each taste to a separate region is a myth — all five qualities can be detected across the tongue.

Taste evolved as a gatekeeper for what enters the body. Sweet signals calorie-dense carbohydrates, salty signals needed electrolytes, and umami signals protein, while bitter and sour often warn of toxins or spoilage — which explains why bitter sensitivity is the sharpest of the five and why bitter taste is innately aversive. Much of what people call taste is actually flavor, a multisensory perception combining gustation with olfaction, texture, and temperature; this is why food tastes bland when nasal congestion blocks the olfactory contribution. Individual differences are substantial, with supertasters possessing unusually dense fungiform papillae and heightened sensitivity to bitter compounds.
